Turkish Red Lentil Soup

This comforting lentil soup combines aromatic vegetables, red lentils, and warming spices for a satisfying bowl. Finished with fresh lemon, mint, and sumac and served with steamed broccoli, it’s a flavorful way to add more protein and fiber to your day.

Ingredients:

  • ¼ diced onion
  • 1 clove smashed garlic
  • 1 tsp extra-virgin olive oil
  • ½ diced carrot
  • ½ stalk diced celery
  • ¼ tsp cumin
  • ¼ tsp thyme
  • Salt and pepper, to taste
  • ⅓ cup rinsed red lentils
  • 1½ cups vegetable broth
  • 1 tsp tomato paste
  • Lemon juice and zest, for finishing
  • Chopped mint, for garnish
  • A pinch of sumac
  • 1 cup steamed broccoli

Directions:

  1. Sauté the diced onion and smashed garlic clove in 1 tsp extra-virgin olive oil.
  2. Add diced carrot, celery, cumin, thyme, salt, and pepper; cook for 8–10 minutes.
  3. Stir in red lentils and cook for 5 more minutes.
  4. Add vegetable broth and tomato paste. Bring to a boil, then simmer for 25–30 minutes.
  5. Blend or leave chunky.
  6. Finish with lemon juice, zest, chopped mint, and a pinch of sumac.
  7. Serve with 1 cup steamed broccoli.
